Do I need an i5 and 16GB of RAM?

I want a laptop for my business.

I use Chrome, Google Workspace, office.com, and Zoom/Teams.

I've owned two (budget) Chromebooks before and used them till hardware failure (1. broken monitor 2. wouldn't charge). I currently own a Windows gaming laptop with an i5 processor and 8GB of RAM, but I'm frustrated with how the OS slows down my device even after 1.5 years of ownership. Startup is slow, updates are annoying, Edge/Chrome slows the device to a crawl sometimes, backing up to OneDrive basically bricks the device till it's done, games that used to run lag now, etc.

I want to be able to hook my laptop up to two more monitors and run Zoom, YouTube, multiple tabs, etc. all at the same time without struggling. Should I be looking at the more expensive Pixelbook Go and Lenovo Thinkpad models – and should I be getting at least an i5 with 16GB of RAM?
